Wagyu Brisket & Bone Marrow Pie

On Sunday, January 20, 2019, .com presented Chef Justin Hall's #OffTheMenu Wagyu Brisket & Bone Marrow Pie at The Kitchen at Atomic in Las Vegas.

It was a brisk and windy night in Vegas, so the hearty Wagyu Brisket & Bone Marrow Pie hit the spot! Chef Hall stuffed a thick slice of brisket inside each pie with a mixture of caramelized vegetables, red wine gravy and bone marrow sealed in a flaky golden pie crust. Baked into the top crust was a sliced beef bone.

.com diners didn't stop with the savory pie. They also ordered Pan Seared Salmon with White Beans (pan seared with butter and thyme and served with braised white beans and greens); Pasturebird Half Chicken in Mole (roasted chicken simmered in red Mole and served with beef tallow tortillas and escabeche); and Grilled Shrimp and Squid Ink Pasta (Argentinian Red Shrimp, Ballerina Pasta, Squid Ink, Arbol Chile, with garlic, butter and wine.)

One .com diner said, “Exactly what we needed on this winter night. Our table shared this pie, a few other entrees and a couple of bottles of wine. Everything was phenomenal plus the atmosphere and staff were great! Perfect night!”
