What’s the story behind the dish?

There's something warm and comforting about savory pies this time of year. Hall's pie amps up the warmth by using tender Wagyu brisket, rich bone marrow, and caramelized root vegetables in red wine gravy. The whole mixture is sealed in a flaky golden pie crust.


Why you should reserve this dish?

It's cold out, and this dish is like a warm parka for your soul. The 9" savory pie made with top-shelf ingredients feeds four to six people, so grab your friends, order a few bottles of wine and reminisce about those 120 degree summer days.

Farmstead Napa Valley FOIS BURGER (Grass Fed Burger)

What’s the story behind the dish?

When we asked Chef Barber about this burger, he said "What's not to love?! You get one of the most decadent bites with the truffle tremor cheese, the richness of the fois gras and a touch of sweetness from the port onions, all supporting the outstanding flavor of our grass-fed beef playing center stage."

Did he say "our grass-fed beef?" Yes!

Long Meadow Ranch, besides making tremendous wines, has one of the largest herds of Highland Cattle in California. The Highland breed has lived for centuries in the rugged, remote highlands of Scotland, where extremely harsh conditions led to natural selection. Long Meadow Ranch acquired some of the oldest bloodlines in the country, representing the very best attributes of this classic breed.

The Long Meadow Ranch herd is several hundred strong and pasture-raised cattle are at their more than 800-acre Tomales Station property. The cattle are grass-fed and grass-finished and are raised employing a protocol that is entirely hormone- and antibiotic-free. The cattle are rotated to fresh pasture seasonally, allowing them to gain weight healthily while maintaining the grassland ecosystem. These are all factors that contribute to beef that has outstanding flavor.

Chef Barber is known for using local and regional ingredients, and this burger is the perfect example. Diners get to experience not just a foie gras burger, but one made with Long Meadow Ranch’s own grass-fed beef, Sonoma foie gras, and Cypress Grove's outstanding Truffle Tremor cheese.

The "I'm Afraid of Americans" Burger

What’s the story behind the dish?

Chef James Trees loves David Bowie. Since January is both the month when Bowie was born and when we lost the legend, it makes sense to honor him. The name of the burger is a dedication to his 1995 collaboration with Nine Inch Nails' Trent Reznor [VIDEO LINK].

Chef Trees also loves American Cheese. When we asked him about the American cheese and this burger, he told us, "I mean hey what’s not to love. The awesome thing about this burger is the mustard and tomatoes are replaced with these awesome pickled green tomatoes that are crunchy. It makes the burger less watery and so much more intense in flavor."


Why you should reserve this dish?

This classic American-style burger shines with crisp, tangy pickled green tomatoes. If you haven't tried the EK Pan Au Lait Bun or EK Special Sauce, they're amazing! Plus, it's a great way to honor an all-time music legend.

Wild Bluefin O-Toro from Tokyo Fish Market, Edo Era Traditional Akazu Red Rice & Fresh Grated Wasabi

What’s the story behind the dish?

When the Tekka team went to Japan and visited Tokyo's Tsukiji Fish Market, they met Mr. Yukitaka Yamaguchi, the renowned owner, and proprietor of the famous tuna wholesaler Yamayuki Group. He hosted the Tekka team and made them this simple roll made of the finest ingredients possible. The combination of flavors and freshness made the Tekka team’s heads spin!

After more than 80 years in service, the original Tsukiji Fish Market closed in October of 2018. The market was relocated to a brand new facility more than a mile away. This #OffTheMenu roll recreates their experience at the original market for all of us.


Why you should reserve this dish?

The best sushi and sashimi is always the simplest. So if you were to make the best tuna roll ever, you'd probably use Wild Bluefin O-Toro directly from the Tokyo Fish Market, Edo Era Traditional Akazu Red Rice, and freshly grated wasabi.
