On Sunday, January 20, 2019, SECRETBURGER.com presented Chef Mike Minor’s #OffTheMenu Smoke Prime Rib Tacos with Manchego Grits and Crispy Potatoes at Border Grill in Las Vegas.
We asked Chef Minor about the dish and he told us, "We developed BBQ Mexicana and we now have a full sized wood burning smoker and wanted to smoke prime rib. We smoked it to rare, then chopped it up and seared it in a sauté pan with garlic and lime. We also make and grind our own polenta at Border Grill, so added a little to the top of each taco with shaved Manchego cheese and crispy shoestring potatoes.
SECRETBURGER.com diners didn't stop with the tacos. They also ordered Baja Ceviche (lime-marinated sustainable fish and shrimp); Chilaquiles (crispy corn tortilla chips, salsa verde panela cheese, sofrito, fried egg); and Yucatan Pork (achiote pork roasted in banana leaves, black beans, red rice.)
