Spokane easily has near 100 different different places to pickup a pizza. Our restaurant has always been focused on fresh unique tapas, but we love a good pie just like everyone else. We figured Secret Burger would be the perfect platform for us to make one, Wandering Table style.
We start with a 72-hour sourdough: 24 hours to bulk ferment and 48 hours in our walk-in in a process is called cold fermentation that slows down the activity of the yeast to produce amazing flavors in the dough. Once that is ready to go, we are going to top it with caciocallo cheese, duck confit and some thin sliced jamón serrano (dry-cured Spanish ham), shaved truffles and a few other hidden gems. These pizzas will be pretty big so plan on having a group of 2-3 to share!
