There are a lot of Banh Mi OG's out there, but I'm going to do my best at creating the best banh mi the region has ever seen. That all starts with the meat. I'm thinking we will cure pork belly for 3 days, slow roast it and thick-cut to be paired with a chicken liver pate to give us a rich fatty base. Then we will be whipping up a special pickle brine for the daikon and carrot. Make a nice fish sauce aioli and slice in some jalapeno, cilantro and onion and pile it high on an airy house-made Vietnamese baguette I'll be baking with Chef Hansen. We will also offering some special ala carte kim chi fries and a list of whiskey cocktails for those interested. See you soon!
