Molotes is a traditional Oaxacan Street Food Dish. Molotes is generally served on a bed of lettuce and stuffed with Chorizo and Potato, topped with Queso Fresco and Salsa Verde or Salsa Roja.
Chef Sal, as a child, couldn’t wait for Sunday’s to come, when he could have his favorite dish made for him by his family.
Since then, he has had dreams of recreating that dish in his own creative style, using his Californian cuisine approach to brighten up the dish and change the flavor profiles to make it still have its traditional feel, but with a more elegant, upscale and creative approach.
