Red chile cheese tortilla, ancho crusted shrimp, house made chorizo, spicy cabbage slaw, guacamole.
These tacos are some what of a legend in Mexico. I was traveling though the Yucatán with a group of chefs when I came across this little tacos stand on the side of the road. I had to order them when I seen Vampiro (vampire) tacos. They dipped the corn tortillas in this red chili oil and added them to this cheese melting on the flat top. When they turned them over the cheese was crispy red and stuck to the tortilla. They topped them with whatever we wanted.
