An Intimate Evening with Paso Underground in Downtown Las Vegas, hosted by Eric Prato and Mario Enriquez of Garagiste Wine Room | Merchant.


Established in 2013, Paso Underground is the first collective tasting room in Paso Robles, California. Proudly curating and presenting a vast portfolio, each of the five wineries work with different vineyards and varietals, bringing a truly unique experience to this one-of-a-kind tasting room.

This unique experience brings "Two Friends, Two Wineries, One Bar" to Las Vegas, sharing FIVE bottles with us on Monday, August 31, for an unmissable pop-up
of the beauty that is the Paso Underground.

$75 PER PERSON: This is a 90-minute, wine-tasting focused event with a small-bites food pairing.

NOTE: There are three (3) seatings, each approximately 90 minutes:
You must choose ONE (1) seating when reserving your tickets.

5pm - 20 seats available
7pm - 20 seats available
9pm - 20 seats available

Whether you want to look at it as five wines with the perfect food pairing, or five dishes with astonishing wine parings, you're in for a delicious and sensory-exciting, educational event.

1. 2018 Chardonnay - Santa Maria Valley Bien Nacido Barrel (ULTIMA TULIE)
Fermented 25% in new French oak, 25% in stainless steel; 10 months in barrel. ONLY 4 BARRELS MADE

2. 2017 Syrah - Edna Valley Jespersen (ULTIMA TULIE)
50% new French oak; 22 months in barrel

3. 2017 Petite Sirah - Central Coast Kukula, French Camp (ULTIMA TULIE)
Neutral French oak; 28 months in barrel

4. 2017 Syrah/Petite Sirah - Central Coast Jespersen, Kukkula (ULTIMA TULIE)
66% New French oak; 22 months in barrel

5. 2017 Hunter Gatherer - Liberty Vineyards, Paso Robles (PRIMITIVE WINES)
75% Cabernet Sauvignon, 25% Merlot
Once-filled French Oak; 24 months in barrel


Chef Justin Kingsley Hall of Main St. Provisions will be providing the small bites food pairings and offers the following menu.

1. Chạo Thỏ: fried rabbit wrapped around sugar cane with lemon grass aioli.

2. Braised Chicken Shank: chicken jus & fried shallot on white grits.

3. Baby Bánh mì: foie mousse, grilled pork, pickled radish, and carrot tops.

4. Sticky Lamb Val-au-Vent: braised lamb in puff pastry cup.

5. Wagyu Bò La lốt: grilled Wagyu beef wrapped in betel leaf, black pepper glaze, crispy garlic, and shiso leaf.
