“Jambon au Chablis is one of my favorite feel good meals. Imagine a Sunday evening in the countryside. You put the good china on the table. Linen napkins in your laps. The passionate tunes of Gary Clarke Jr. playing in the background.
“I think this dish surprises people because of the main ingredient. City ham isn't often thought of as a ‘center of the plate’ ingredient. Sliced ham or ham steaks have been the side dishes of breakfast or a filling for sandwiches for too long.
“This dinner of rolled ham, baked in a velvety tomato sauce is a thoughtful meal for two spending the night at home together. The dinner blends American & French cuisine as well as ingredients.
“Because this is an experience I am so fond of, we wanted to make it complete with a bottle of wine already in the bag!”

Heritage Food Farms ham, rolled with almond and walnut smoked Beehive cheese. Baked in a smooth tomato sauce of Remy Martin cognac, fresh herbs, and shallots.
Dandelion greens braised with dried fruit and pistachios
2019 Moulin de Gassac, Picqoul de Pinet AOP, Languedoc, Southern France. Picpoul as a grape is light, dry, saline and an easy accompaniment to lighter fare.
