5098 bread is back at the Vegas Test Kitchen, and with an updated menu!
After leaving their corporate jobs in the Bay Area behind, Kris & Ryan Wilson headed off to travel the world and learn as much about food as they could in January 2020. An 18 month plan was quickly derailed due to the pandemic, BUT they refused to come home and still managed to make the most of their situation by staying down in Uruguay for 4 additional months, learning how to bake bread and drawing inspiration from a stay with master cheesemaker and baker Martin Rosberg.
Fast forward to January 2021, they opened their cottage bakery 5098 Bread. In March, they were featured in an Eater Las Vegas article about microbakeries that help shape the community here in Las Vegas. Specializing in naturally leavened (sourdough) breads, focaccia and "the Cookie", all of their products are made with their sourdough starter The Hof.
the LSL - Named by their friend Joe who said it looked like the loaf at the Last Supper when they first gave it to him, this country style loaf is baked with a darker, caramelized crust. Whole wheat, rye & spelt flours. $8
the Nacho Libre - Cubes of sharp cheddar and pickled jalepenos have wrestled their way into pockets of the crumb. $10
the Don Chengo - Green & black olives in a light sourdough base. Buttery Castelvetrano and briny Kalamata olives combine perfectly with an airy, fluffy interior. Named after a magical olive farm that they stayed at when they lived in Uruguay. $10
the Tipsy Fig - Wine soaked figs in a sourdough rye. A mixture of rye flakes, rye flour, buckwheat, whole wheat, and of course our sourdough starter the Hof. Elevate your cheese board, impress at your dinner party, or just slather in butter (or ricotta?) and enjoy a little vino in the morning. $11
the Roasted Garlic Mini Loaf Collective - Consider these your new social distancing. We use our white sourdough base, make it half the size of our normal loaves, and load it up with sweet roasted garlic. You may not see the garlic, but you’ll certainly smell it. Choose your adventure - plain roasted garlic, roasted garlic & sun dried tomatoes, roasted garlic & parm … or one of each. Perfect for a toasted slice, elevated bruschetta, or better yet the ultimate panzanella salad.
