k.ando is a Las Vegas ghost kitchen concept that specializes serving portable Japanese-inspired modern katsu sandos and dishes. Started by a small team of three, k.ando was created from a genuine appreciation for the role food plays in shaping our experiences.

“Thoughtful food that moves the heart”

“Kandou” refers to more than just being impressed, it refers to the heart being moved. Our concept is an accumulation of the experiences that left a lasting impression on us. Everything from special food memories to what we wish for our guests, we aim to provide a purposefully designed experience that moves the hearts of our guests.

Our food is deeply influenced by what has moved our chef, Kevin Hernandez-Ng. Inspired by moments from his childhood in Los Angeles and his career in the kitchens of Las Vegas, every dish expresses these distinct memories and feelings. Tied together with an attention for seasonality and an obsession with quality, k.ando’s menu is simple but luxurious.

For our second appearance at the Vegas Test Kitchen on March 28th, we will be offering both of our signature Katsu Sandos and this month's sides:

- the Pork Katsu Sando: miso cured and maple smoked Kurobuta pork loin, balsamic katsu sauce, Kewpie dijonnaise, finely shredded cabbage, Lelysee Milk Bread

- the Beyond Menchi Katsu Sando: Beyond Meat menchi katsu, balsamic katsu sauce, Kewpie dijonnaise, finely shredded cabbage, Lelysee Milk Bread

- k.ando Takoyaki: confit octopus takoyaki, tamarind takoyaki sauce, tempura crunch, Kewpie mayonnaise, aonori, katsuo glass, wasabi and chive

- Hamachi tartare: marinated yellowtail, Japanese young peach, Atlantic smoked salt, sudachi, and chive on top of a tempura soy cracker

- Baby Artichoke salad: thinly sliced baby artichokes, torn gem lettuce, shio koji vinaigrette, chive, umami powder, and bubu arare crackers
