Heirloom Corn Flautas with Morita sauce, filled with Oaxacan string cheese and potatoes.
The star of this creation is the corn tortillas. We are used to consuming highly processed tortillas made with low-quality GMO corn because the real deal is not widely available or known. Heirloom corn tortillas are made through a process called nixtamalization. This procedure takes 12 hours to achieve and only then corn can be turned into the dough for tortillas. This ancient technique makes tortillas tastier and more nutritious. Pretty incredible stuff worth trying!
Flautas are very popular in Mexico's local street markets.
The heirloom corn tortillas you will be working with are hand pressed, and will be made with 3 different Oaxacan corn varieties: blue, yellow and mauve.
The cheesy potato filling gives us a soft texture after a crunchy bite. Flautas will be dressed with a delicious, tangy and spicy morita sauce, sour cream, and yes, MORE cheese!
