To me this is one of my favorite dishes. Carbonara is a tricky dish but very simple as well. I love this dish in the morning. I honestly think it is better than biscuits and gravy. Take a really good Guanciale and render it down get as much fat out of it for the dish. Taking the pasta water adding little to the pan with the Guanciale, take egg yolks and finely grated parmesan. Stir it together and then add to the water. you have to do this fast and clean so the eggs don't curdle. Then take your Pasta add in to the dish. After plating take the grilled piece of rustic house bread and rub with garlic. then take a sous vide egg yolk on top of the pasta. To add that extra creaminess to the dish!
