Chef Josh Bianchi was raised 90mi north of NYC in rural Chatham, NY. He entered the kitchens at 13, working his way through the brigades in NYC, Miami , Kansas city, Philadelphia and Las Vegas under some of the worlds most celebrated Chefs.

Growing up in the northeast where the temperatures reach about 20 degrees this time of year, I had a "paper route" and had to walk everyday in the blistering cold. Mom always had this type of food around to warm us up; braised meats, pasta, fresh bread and lots of vegetables. This is probably my favorite kind of cooking this time of year when I'm looking for some "comfort." I look forward to sharing my humble approach of food with you.
